Preparation (1):

  1. Cut the cod into 1-inch pieces and the oysters and shrimp in half. Chop the potatoes and onion into ½-inch dice, carrots into ¼-½-inch pieces, and celery into ¼-inch pieces.
  2. With the Instant Pot set to high sauté, heat the oil and sauté the carrot, onion, and celery for 5 to 10 minutes. The idea is to soften the veggies and not to brown them.
  3. Add the garlic, potatoes, and flour and stir for half a minute.
  4. Add the chicken broth and clam juice, then the dried thyme and Old Bay, and cover the pot.
  5. Let it pressure cook for 5 minutes under high pressure using the “beans/chili” setting. Afterwards, let the pressure naturally release for 10 minutes before opening the pot.
  6. Add the chopped shrimp, cod, corn, drained chopped oysters, and cream. Let them simmer on high sauté for 5 to 10 minutes while occasionally stirring to prevent sticking.
  7. The fish’s internal temperature should be 145°F (63°C). Feel free to check using a meat thermometer.
  8. Serve the chowder in soup bowls and garnish (if desired). Enjoy!
