  • 3 Eggs
  • 1 c. Canned Pumpkin Puree
  • 1 c. Mashed Ripe Banana
  • 1 c. Chopped Pecans

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit. Grease and flour two 8-inch loaf pans, tapping out the excess flour.
  2. In a large bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon, ginger, cloves and nutmeg.
  3. In another bowl, whisk together the sugar, brown sugar and oil until combined. Add the eggs and whisk until light and fluffy. Add the pumpkin puree and mashed banana and mix until combined.
  4. Slowly add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the chopped pecans.
  5. Divide the batter evenly between the two prepared pans and bake for 45-55 minutes, or until a toothpick or cake tester inserted into the center of the bread comes out clean.
  6. Allow the bread to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely. Slice and serve. Enjoy!

  • 1 ½ teaspoon Pumpkin Spices – 1 teaspoon cinnamon + 1/4 teaspoon Ginger + 1/4 teaspoon allspice or nutmeg
  • 1 ½ cup All-Purpose Flour – or white whole-wheat flour or white spelt flour
  • ¼ teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder

Instructions:

  1. Preheat the oven 350 degrees F (180 C). Grease a 9-inch loaf pan with vegan butter or oil and dust with flour. Tapping out the excess flour.
  2. In a large bowl, whisk together mashed banana, pumpkin puree, avocado oil, sugar, and vanilla extract until combined.
  3. In a separate bowl, whisk together flour, salt, pumpkin spices, baking soda, and baking powder.
  4. Slowly add the wet ingredients to the dry ingredients, mixing until just combined. 
  5. Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick or cake tester inserted into the center of the bread comes out clean.
