  • 2.5 cups of flour
  • 1 cup warm water
  • ¼ tsp salt

  • 1 medium cabbage
  • 1 bunch of spinach
  • 2 cups of Finely chopped tofu
  • 15 dried mushrooms (soften them by soaking for about 20 mins in warm water)
  • 2 chopped carrots

Ingredients for Seasoning

  • 5 tbsp soy sauce
  • 4 tbsp sesame oil
  • 1 tbsp sugar
  • 1 tbsp grated or powdered ginger
  • 2 tsp white pepper
  • 1 tsp salt

Instructions

  1. Mix all three ingredients of dumpling wrappers and knead them into a dough.
  2. Leave the dough for a minimum of 15 minutes to let it settle
  3. Roll out the dough and cut out circles from it with the help of a mug or any round cutter.
  4. Dust them with flour and place them aside.
  5. First, blanch spinach and cabbage in boiling water to prepare the filling for 5 to 20 seconds. Then, drain the water and let it cool.
  6. Meanwhile, mix chopped carrots, tofu, chopped and soaked mushrooms in a large bowl.
  7. After the blanched veggies have cooled down, chop them and squeeze out all the water. Then, add them to the mixing bowl.
  8. Add all the seasoning ingredients to the bowl and mix all the ingredients until combined well.
  9. Now, the filling is also ready, so you can wrap them with the dumpling wrappers that were previously made.

Ingredients for Dumplings

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¾ tsp salt
  • 1 tsp fresh thyme
  • ¼ tsp cracked pepper
  • 2 tbsp olive oil
  • ½ cup warm water

Ingredients for the Soup

  • 1 tbsp olive oil
  • 1 medium-sized chopped white onion
  • 2 chopped celery stalks
  • 2 chopped carrots
  • 5 stems of chopped green onion
  • 1 tbsp vegan butter
  • 1 tbsp all-purpose flour
  • 1 tsp salt
  • 1 tsp cracked pepper
  • 1 tsp fresh thyme
  • 1 tbsp vegetable stock paste
  • 7 cups boiling water

Instructions

  1. Combine flour and baking powder with salt, thyme, and pepper for dumplings. Then, pour olive oil and water slowly and mix well. Knead it into a dough, cover it, and let it rest for some time.
  2. Meanwhile, prepare the soup. Add olive oil to a pot on medium flame. Add onions. Add carrots, celery, and green onions when they have turned golden. Cook these for 7 to 8 minutes, but do not let them burn.
  3. Now add butter. When it has melted and is well mixed, add flour and let it blend well.
  4. Then add salt, pepper, and thyme. After this, increase the flame and add vegetable stock paste mixed with some boiling water.
  5. Stir well. When the water has decreased enough, add the 7 cups of boiling water and let the mixture boil.
  6. Let it cook for some while at low flame. Meanwhile, make small balls from the dough mixture and put them in soup.
  7. Then, let it cook for 5 minutes, and the delicious vegetable soup with vegan dumplings is ready.

What Is the Secret to Perfect Dumplings?

A perfect dumpling has a juicy filling, soft skin but crispy outer, and a good shape. To achieve these you must take note of some pointers while making the dumplings.
