  • 1 cup red lentils 
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2-3 cloves garlic, minced
  • 1 tomato, diced
  • 1 carrot, diced
  • 1 tsp curry powder
  • 1 tsp salt 
  • 1 tsp black pepper
  • A handful of chopped cilantro
  • 1 medium-sized avocado

  1. Cook the lentils according to the package instructions. They should be soft, but not mushy. To check, take a small bite-they should be cooked thoroughly, but still have some firmness to them.
  2. In a hot skillet, drizzle olive oil. Add chopped onions and minced garlic and cook until they are golden brown and caramelized. 
  3. Add in carrots, tomatoes, curry powder, salt, and pepper. Simmer for 5 minutes. 
  4. Stir in the lentils. Simmer until well-combined. 
  5. In a bowl, serve the lentils garnished with cilantro and sliced avocado.
