  • 1 1⁄2 lbs salmon filets
  • 1 chicken bouillon cube,

  • 2 slices onions, separated into rings

  • 1 cup cooked boneless skinless chicken breast, cubed

Tempeh Reuben Club Sandwich

  • ¼ cup mayonnaise made with avocado oil

  1. Mix mayonnaise, ketchup, apple cider vinegar, hot sauce, mustard, ¼ teaspoon smoked paprika, and ¼ teaspoon garlic powder in a small bowl. Stir in the pickles. Set this sauce aside.
  2. Cut the tempeh block in half, then slice each half horizontally to make four thinner pieces. Set them aside.
  3. In a skillet (10 inches), combine broth, soy sauce, balsamic vinegar, remaining smoked paprika, garlic powder, and black pepper. Place the tempeh pieces in the skillet and cut side down. Bring it to a boil over high heat, then reduce to medium-high and let it simmer for three minutes.
  4. Flip the tempeh over and simmer for two minutes until most of the marinade is soaked up. If the pan gets dry, add more broth or water, one tablespoon at a time. Remove the tempeh and set it aside.
  5. Pour two tablespoons of olive oil into the pan and spread it around. Put the tempeh back into the pan and cook for about two minutes on each side. Turn off the heat. Place half a slice of Swiss cheese on top of each piece of tempeh.
